1 Loaf of Bread
1 Large Onion
1 small can Tomato Paste
2 c Tomato juice
½ c Sliced Lindsay Olives
( Lindsay Naturals are wonderful)
Cashew Cheese (recipe below)
Place a layer of bread slices in a deep 
baking dish to cover the bottom. Spread 
with tomato paste and then with cashew 
cheese or tofu dressing.  Place another 
layer of bread slices on top and spread 
the same.  Make as many layers as you 
like and pour tomato juice over them.  
On the top layer that has the tomato 
and cashew cheese sprinkle the chopped 
onions and decorate with olives.  If you 
want it more crunchy put onions on each 
layer.  Cover and bake 45 minutes at 350 degrees.
Toasted or dried slices of bread make a great flavor.
Cashew Cheese
½ c Cashews Raw, washed
¼ c Pineapple Juice
½ t Salt to taste
¼ t Onion Powder
¼ t Garlic Powder
½ C Celery
2 T Sesame Seeds
1/8 C Tomato Paste
¼ C Fresh Lemon Juice, to taste
Put everything in the blender except the lemon juice until smooth.
Pour into glass jar and gently stir in the lemon juice.
Cover to store in fridge.
Add On # 2
½ Cup almonds
4 Cups Tomatoes
½ Cup Onions
2 Garlic Cloves
½ t Garlic Powder
¼ t Onion Powder
½ t Salt
1T Lemon Juice
2 T Red Bell Pepper
1 Celery Stick
Blend together to make a tomato sauce.
Cover the bottom of the baking dish with tomato sauce.
Then layer with bread and tomato until the pan is full.
Top with the tofu dressing and decorate with onion and
olives.
Bake for one hour at 350 degrees.
